Warbat with cream

Palestine to Syria, Lebanon, Egypt, Jordan, and Turkey. It contains from cream and crispy and very thin Arabic dough (phyllo), “The Turks learned to make the finest and crispest dough from the Arabs: it is so fine and thin that you can see through it”, Debasque, Roger. . This dessert mainly created in Nablus; it a city lies in north of Palestine; this dessert is very common in Palestine which used as hospitality for visitors, or at breakfast with coffee.
This dish contains from phyllo dough. ”Phyllo, which means “leaf “in Greek, is a very thin, delicate sheet of pastry found in Greek and near and Middle Eastern cuisine”, Bittman, Mark. The other main important ingredient is Qashtah (Arabic clotted cream) which contains from milk, heavy cream, little of vinegar and sugar, or Arabic pudding which contains from milk, corn starch, sugar, vanilla, and Arabic gum. This cream used in stuffing the dough instead of nuts in Baklava, that’s why this ingredient is important. The other ingredients are, margarine, unsalted butter, and to make syrup, sugar, water, and lemon juice.
This dish has important cultural significance in Palestine, because it used in mainly way in Ramadan (the holly month for Muslims) when they are in fast, and they are need the energy. This kind of sweets gives the energy but in the same time it has many many calories. Also it used at breakfast with cup of coffee to give the energy for whole day. So this sweet refers to the richness of Palestinian kitchen with many kinds of traditional desserts and the Palestinian cuisine are known by creating several kinds from one dish. For example this dish warbat with cream or Qashtah created from baklava but without nuts and there is another stuffing like sweet cheese instead of cream. In other words we can say that this dish refers to the diversity of the Palestinian kitchen.
And so we have come to something else again, the historical importance of this sweet dish which refers to the historical importance of Palestinian cuisine. In the same way, the Egyptian kitchen has the same dish but in different name is (kullag). In the final analysis we can say that the Palestinian sweets has a great effect in the Middle East and Europe.
